Andalusian chicken, broccoli and almond chilli (serves 1)
140g chicken breast
10ml olive oil
20g garlic, crushed
20g red onion
10g chilli
20g red pepper
5g thyme
20ml chicken stock
15g slivered almonds
50g broccoli
100g spring greens
1g arrowroot
1 Remove the visible fat from the chicken breast and marinate the chicken in half the garlic and half the olive oil for at least six hours.
2 Chargrill the chicken. Finely chop the red onion, chilli and pepper and sweat in the remaining oil with the thyme and remaining garlic.
3 Add the chicken stock and bring to the boil. Season to taste.
4 Mix the arrowroot with a little cold water and add it to the stock, stirring to combine. Bring back to the boil. Meanwhile, toast the almonds in a dry pan with a little salt.
5 Blanch and refresh the broccoli and spring greens for no more than 20 seconds. Arrange the chicken on the vegetables and top with the sauce and almonds to serve.

The promise: The ABC programme promises to alkalise, balance and cleanse your body to blast flab, fast.
What to expect: A breakfast juice, two green juice ‘snacks’, a chilled soup for lunch and a raw food dinner, plus a daily wheatgrass shot.
The food: This is not for the faint-hearted, as going from real food to a predominantly juice-based diet is quite challenging. I definitely felt lighter after the three-day trial, but I was missing solid meals like nobody’s business! The breakfast shake was filling and the lunchtime soups were reasonably tasty, but I found the evening meals – vegetable ratatouille and peppers stuffed with quinoa – a little bland. The juices were quite filling, so I didn’t feel too hungry between meals.
Did it deliver? This is a great way to shed weight and lighten up before a holiday or if you’re trying to lose some baby weight, but I wouldn’t recommend it for day-to-day life or busy weeks, as it can leave you lacking energy.

Watermelon and tomato gazpacho (serves 1)
2 cups watermelon, roughly chopped
1 beef tomato, roughly chopped
½tsp cayenne pepper
5tbsp olive oil
Sea salt and cracked pepper to taste
1 small avocado, chopped
½ red pepper, chopped
3 spring onions, sliced
2tbsp flat leaf parsley, roughly chopped
2tbsp coriander, roughly chopped
1 Add the watermelon, half the tomato, cayenne pepper, olive oil, salt and pepper to a food processor and blend until smooth.
2 Pour the mixture into a large serving bowl and stir in the avocado, tomato, and pepper cubes.
3 Sprinkle over the spring onion slices and garnish with the herbs. You may like to add a squeeze of lemon juice to sharpen it if the weather is really hot.

Chicken and prawn pad Thai (serves 4)
50g rice noodles
2tbsp sesame oil
1tbsp groundnut oil
4 cloves of garlic, peeled and crushed
2 red chillies, deseeded and finely chopped
200g free range chicken, cut into bite size pieces
200g raw prawns, defrosted
400g carrots, peeled and cut into julienne strips
800g bok choy, trimmed and quartered
300g bean sprouts
6tbsp tamari soya sauce
6tbsp fish sauce
2tbsp white wine vinegar
Juice of 2 fresh limes
70g raw, unsalted cashew nuts, roughly chopped
Handful fresh coriander, leaves picked
1 lime, cut into quarters
1 Soak the noodles in a bowl of boiling water for around 10 minutes (follow packet instructions). Drain and set aside.
2 Heat the sesame and groundnut oil in a large wok or frying pan. Add the garlic and chilli and stir-fry for a couple of seconds. Add the chicken and cook for three minutes. Add the prawns and cook for two minutes. Add the carrots, bok choy and bean sprouts and stir-fry for two minutes.
3 Add the cooked noodles to the pan and toss together. Add the tamari, fish sauce, white wine vinegar and lime juice and toss together, until all the flavours are combined and the pan is sizzling.
4 Place in the middle of a platter and scatter over the cashew nuts and coriander. Place the lime wedges around the side to serve.

Healthy chow mein
300g buckwheat soba noodles
1tsp sesame oil
1tsp coconut oil
1 red onion finely sliced
2 spring onions sliced
1tbsp grated ginger
2 cloves garlic, finely chopped
½ red chilli, finely chopped
1tbsp lime juice
1 beetroot, peeled and grated
2 carrots, peeled and grated
1 courgette, grated
½ bunch coriander, finely chopped
1tsp black sesame seeds
1 Place the noodles in boiling water and cook for three minutes, then drain and refresh under cold water until chilled.
2 Heat the sesame oil and coconut oil in a frying pan. Add the red onion and spring onion and cook on a medium heat for 5 minutes. Now add the ginger, garlic and chilli and cook for a further 3 minutes.
3 Add the noodles and continue to stir so that they are completely covered in the mixture. Transfer the noodles to a bowl.
4 Add the lime juice, grated beetroot, carrot, courgette and coriander, mix together and season. Serve with a sprinkling of sesame seeds.

Healthy dinner ideas

Cook up a healthy weekend feast for friends using fresh ocean bounty and bold summer flavours

Thai fish cakes
Makes 16 fish cakes
500g fresh salmon, deboned, skinned (or canned salmon)
1tbsp kecap manis
2tbsp coriander leaves
1tbsp palm sugar, grated (or brown sugar)
1 egg
1tsp salt
2 kaffir lime leaves
Zest and juice of 1 lime
2 spring onions, finely chopped
150ml sunflower oil
Red curry paste
1 red chilli
1 lemongrass stalk, finely sliced (white part only)
2 shallots
1tbsp ginger, peeled and grated
2 cloves garlic
Make the red curry paste by blending all the ingredients, or pounding in a mortar and pestle to make one large tablespoon.
Cut the salmon into chunks and mix with the kecap manis, coriander, palm sugar, egg, salt, kaffir lime leaves, red curry paste, lime juice and zest. Use a food processor or potato masher to blend ingredients until well combined – chunky but not pureed. Stir through the spring onions. Divide into 16 portions and roll and flatten into patties.
Heat the oil in a frying pan to a medium heat. Fry the patties in batches for about 2 minutes on each side or until golden brown. Drain on absorbent paper.
Top tip No time to make your own curry paste? Pick up a bottle from the supermarket or make it ahead of time and freeze it
Smoked salmon rilettes
Serves 6-8
300g piece of salmon fillet, skinned and boned
2 sourdough baguettes
1/3 cup extra virgin olive oil
200g smoked salmon, chopped
2tbsp baby capers, finely chopped
1 eschalot, finely chopped
Zest of 2 lemons
1/2 bunch dill, finely chopped
1/2 bunch chives, finely chopped
200ml creme fraiche
Cornichons (small pickled cucumbers) and lemon cheeks, to serve
Salt and freshly ground black pepper to season
Place fresh salmon in a heavy-based saucepan. Pour 1L boiling water over fish and cover with a tight-fitting lid. Stand for 30 minutes to gently poach.
Meanwhile, heat a chargrill pan or barbecue to medium-high heat. Brush bread with oil and chargrill for 2 minutes on each side or until lightly charred. Set aside.
Remove cooked salmon from water and pat dry. Remove and discard skin. Flake flesh into a large bowl and cool completely. Add smoked salmon, capers, eschalot, lemon zest, herbs and creme fraiche. Stir until just combined. Season with salt and freshly ground black pepper.
Serve rilettes with bread, cornichons and lemon cheeks.
Barbecued prawn skewers and salsa verde
Makes 6 skewers
24 large green prawns, peeled, deveined and with tails on
6 pre-soaked bamboo skewers
2tbsp extra virgin olive oil
Salt and pepper to taste
Lemon wedges, to serve
Salsa verde
1 cup flat-leaf parsley leaves
1/2 cup basil leaves
1/4 cup mint leaves
2tbsp baby capers
5 anchovy fillets
1/2 cup extra virgin olive oil
1/4 cup red wine vinegar
Juice of 2 lemons
Salt and pepper to taste
Thread the prawns onto the skewers, through one side of the tail, out the other and then through the body of the prawn.
Repeat until 3-4 prawns have been threaded onto each skewer. Drizzle with olive oil and season with salt and pepper.
On a hot barbecue or chargrill pan, grill the prawns for around 90 seconds each side or until the prawns change colour and are just cooked through.
To make the salsa verde, finely chop all the herbs, capers and anchovy fillets and place in a bowl. Add the olive oil, red wine vinegar and lemon juice. Season with salt and pepper to taste.
Spoon the salsa verde over the prawns and serve with lemon wedges.
Confit salmon with sweet soya dressing
Serves 4
1/2 cup caster sugar
1/2 cup white vinegar
6cm piece of ginger, peeled and julienned
500ml extra virgin olive oil
4 x 80g pieces salmon, skinned and boned
2tbsp sesame seeds, toasted
1 small baby fennel shaved, plus the fronds
Sweet soya dressing
1/2 cup kecap manis
2tbsp soya sauce
Juice of 2 limes
1 clove garlic, minced
2 kaffir lime leaves, julienned
2tbsp whole coriander leaves, plus extra to garnish
1 red chilli, sliced
Pickle the ginger by bringing the sugar and white vinegar to the boil. Once the sugar is dissolved, pour over the ginger and set aside to cool.
Heat the olive oil to 46˚C in a pan. Use a cooking thermometer, as the temperature is crucial. Place the salmon in the oil in the pan so it is totally submerged. Keep the salmon in the oil at this temperature for 15 minutes. Remove the salmon from the oil and gently pat dry and roll in toasted sesame seeds.
For the dressing, pour the kecap manis, soya sauce, lime juice, garlic, kaffir lime leaves, coriander and chilli into a bowl and mix until well combined.
To serve, spoon some of the dressing into a shallow bowl and place the salmon in the middle. Scatter around some shaved fennel, and the fronds, with the coriander leaves and ginger.
Top tip You may have some pickled ginger left over to use in another recipe. It’s great with sushi and other Asian dishes
Roast Sweet Potato Salad with Chorizo, Red Onion and Goat’s Cheese
Serves 4 as a side salad
1 clove garlic, finely sliced
2 red onions, peeled and cut into wedges
1/4 cup olive oil
Salt and pepper to taste
1 large sweet potato
1 chorizo sausage
Juice of 3 lemons
1/4 cup pumpkin seeds
60g creamy goat’s cheese
Preheat oven to 180°C. In a small baking dish, place the garlic clove, onion wedges with 1 tablespoon of olive oil and salt and pepper to taste. Place in the oven for 20 minutes or until softened.
Peel the sweet potato and slice lengthwise into 11/2cm pieces. Cut into strips diagonally, approximately 5cm in length. Line a separate small baking dish with the strips of the sweet potato. Drizzle with 1 tablespoon olive oil and salt and pepper to taste. Place in the oven and bake for 15 minutes.
Cut the chorizo sausage into 5mm slices and place in a cold frying pan, with 1 tablespoon of olive oil. Heat slowly until heat reaches medium, and fry for 5 minutes until the sausage is golden brown. Turn off the heat and allow the sausage to sit in the oil and infuse for 10 minutes.
Remove the chorizo from the frying pan, strain and keep the oil to one side. Mix the reserved oil with the lemon juice and stir. Add salt and pepper to taste.
Heat a frying pan to medium and pan roast the pumpkin seeds until light brown for about 3 minutes, shaking the pan during frying. Break the goat’s cheese into chunks. Remove the sweet potato and onions from the oven.
To serve, pile the sweet potato in the bottom of a dish, add the onions and sausage, sprinkle with the pumpkin seeds and the goat’s cheese. Drizzle salad with the strained oil.
Top tip This side dish is delicious with the smoky flavours of barbecued fish, and it makes a healthy, low-GI alternative to potato salad

Finding the time to exercise is rarely easy, which is why we at Men’s Health provide you with a selection of quick muscle wins to suit all training goals. But if you can’t even squeeze in quarter of an hour at the gym, what’s the best way to sear off fat in the shortest possible amount of time? Sports scientist Christian Finnpresents a simple three-move no-equipment routine which should allow you to burn up to 300 calories over a 10-minute period.

Jump squats

Stand with your feet shoulder-width apart and your arms at your sides. Start by doing a regular squat and then jump up as high as you can while reaching for the ceiling. Upon landing, lower your body into the squat position and repeat. Resist the urge to scream “Yippee!” upon takeoff.

Spider-Man press-ups

Use the Borg Scale to monitor your intensity. Developed by Swedish scientist Gunnar Borg, this rating of perceived exertion is your inner feeling of how
hard you are working. “It isn't a measure of how tired your legs are or how hard you are breathing, but rather your total perception of effort,” explains Finn. On the Borg scale, the perceived effort is assigned a rating between 1 and 10, with 10 as maximum effort and 1 as no effort at all. During the sprints, aim for a rating of 8.

Mistake #1:
Doing Isolated Exercises

Doing isolated exercises like bicep curls and tricep kick-backs will NOT get you any significant results. These one-muscle-at-a-time moves simply don't stimulate enough muscle fibers to build lean muscle or expend enough energy to maximize your calorie burn.
If you want to build lean muscle while burning fat so you can get serious definition, you need to perform exercises that stimulate as many muscles and expend as much energy as possible at the same time. Using these types of exercises (which I'll reveal on the next page) will dramatically accelerate your results.

Mistake #2:
Working Out With Machines

Fancy machines may make the gym look high-end, but truthfully, about the only thing they're good for is for sitting down while you tie your shoes or catch your breath! The problem is this: Machines alter the way your body naturally moves and restrict your range of motion. This severely limits your ability to fully activate all of your muscles fibers -- that means less fat burning and less muscle definition. Worse yet, machines can cause excessive strain on your joints, leading to nagging injuries down the road.

Mistake #3:
Doing Long Bouts of Cardio

Look, you need to do cardio if you want to lose weight and burn fat...BUT there's a right way and a wrong way to do your cardio workouts. If you've been pounding the pavement or the treadmill with nothing to show for it (except sore joints and a pair of stinky worn out sneakers), you already know it takes a lot of effort to get minimal results.

Mistake #4:

Mistake #5:
Repeating The Same Workouts Over & Over

Repeating the same workouts over and over is a surefire way to STOP getting results. We're creatures of habit and we tend to stick to things we're familiar with and good at. Doing Loooong Workouts

How to Make Your Body Burn More Calories

You can make weight loss quicker and easier by increasing your metabolic rate and burning more calories.
Metabolic Rate is the rate at which the body burns up calories. A body that consumes 2500 calories a day, and burns 2500 calories a day will stay at the same weight. A body consuming 2500 calories daily but burning only 2000 will gain weight at the rate of about 1lb a week.
This explains why that ‘lucky’ person across the table from you doesn’t get fat from all that junk food.
You can do quite a lot to speed up your metabolism – the secret of burning calories lies in knowing what determines your metabolic rate and what you can do to influence it.

You burn calories to provide energy for three main functions:

Basal Metabolic Rate (BMR)

This is the amount of calories you burn just by being alive – even when you are lying down, doing nothing. BMR accounts for approximately 60% of the calories burned for an average person.

Burning Calories for Activity

This is the energy used during movement – from lifting your arm to operate the remote control to cleaning the windows. This accounts for approximately 30% of the calories burned by an average person.

Dietary Thermogenesis

The ‘thermogenic effect’ described as meal-induced heat production – the calories burned in the process of eating, digesting, absorbing and using food.

How to Speed Up Your Rate of Burning Calories

You can influence all these factors, and speed up your rate of burning calories using some, or all, of the following tactics:

Build Muscle

Increase the amount of muscle in your body. For every extra pound of muscle you put on, your body uses around 50 extra calories a day. In a recent study, researchers found that regular weight training boosts basal metabolic rate by about 15%. This is because muscle is ‘metabolically active’ and burns more calories than other body tissue even when you’re not moving.
Training with weights just 3 times a week for around 20 minutes is enough to build muscle. Not only will you be burning more calories, you’ll look better – whatever your weight.

Move More

Although the average person burns around 30% of calories through daily activity, many sedentary people only use around 15%. Simply being aware of this fact – and taking every opportunity to move can make quite a dramatic difference to the amount of calories you burn.
The trick is to keep the ‘keep moving’ message in mind. Write the word ‘move’ on post-it notes and put them in places you’ll notice them when you’re sitting still. Then, take every opportunity to move – here’s some ideas for burning calories:
  • Tap your feet
  • Swing your legs
  • Drum your fingers
  • Stand up and stretch
  • Move your head from side to side
  • Change position
  • Wriggle and fidget
  • Pace up and down
  • Don’t use the internal phone – go in person
  • Use the upstairs loo
  • Park in the furthest corner of the car park
  • Stand up when you’re on the phone
  • Clench and release your muscles
You’ll find lots of opportunities for burning more calories if you remember that you’re looking for them! Keep thinking ‘keep moving’.

Eat Spicy Food

There is evidence to show that spices, especially chilli, can raise the metabolic rate by up to 50% for up to 3 hours after you’ve eaten a spicy meal.
Drinks containing caffeine also stimulate the metabolism, as does green tea.

Aerobic Exercise

As well as the actual amount of calories burned during exercise – studies have shown that sustained, high-intensity exercise makes you burn more calories for several hours afterwards.
Try 30 minute sessions of heart rate raising exercise, such as vigorous walking, step aerobics, jogging, cycling or swimming, 3-4 times a week.

Eat Little and Often

There is some evidence to suggest that eating small, regular meals will keep your metabolism going faster than larger, less frequent meals. There are two reasons why meal frequency may affect your metabolism. Firstly, levels of thyroid hormones begin to drop within hours of eating a meal, and metabolism slows. Secondly, it may be that the thermogenic effect of eating several small meals is slightly higher than eating the same amount of calories all at once.
Provided your small meals don’t degenerate into quick-fix, high fat, high sugar snacks, eating little and often can also help to control hunger and make you less likely binge.

Bingo wings excercises

These moves are all you need to sculpt strong sexy arms and banish those bingo wings

It’s party season, and that means showing off your body of work in the hottest frock you can find. But if you’re reluctant to let your arms out of hiding, don’t worry – we’ve got the moves you need to banish cover-ups to the back of the closet. Whether you’re opting for a body con, maxi or cutout dress, this circuit will work your entire upper body to sculpt those arms into lean, mean, mulled-wine-holding machines!
How to do it
Perform a full set of the exercise, then take 20-30 seconds rest and move on to the next exercise. Repeat for the prescribed number of sets.
Beginner: 2 x 8 reps each move
Intermediate: 3 x 10 reps each move
Advanced: 4 x 10 reps each move

Slim: fast

Slim down your body as well as your workout time. As little as 15-20 minutes of intensive resistance exercise can help to flatten your belly in 45 days, say researchers from Southern Illinois University. “The first set of an exercise switches on the hormones that control your metabolism, and doing any more than three sets won’t help,” says study author, Erik Kirk. We got John Beall, a former US Marine and personal trainer, to devise a fat-burning technique that has you training for 20 minutes a day, five days a week. “The workouts are made up ofbodyweight exercises done circuit-style [without rest between moves] to raise your heart rate," says Beall. Do Giant Set 1 and Giant Set 2 on alternate days.

GIANT SET 1

Warm-up with 2-3mins running. Do each exercise for 45 secs, rest 15 secs, then move to the next exercise. Rest 1 min after you’ve done them all once, then repeat the circuit twice more.

1A Squats

Glutes, quads, calves, abs
1. Stand with your feet shoulder-width apart.
2. Bend your hips and knees. You can stop when your thighs are parallel to the floor. The deeper you go, the more muscles you’ll activate, helping to burn more calories. Rise to the start position.

1B Lunges

Glutes, quads, calves, abs
1. Stand with your feet roughly hip-width apart.
2. Take a big step forward with your right foot and bend your right knee until your thigh is parallel to the floor and your knee is at 90 degrees. Reverse the motion, stepping back into the starting position. Repeat with your right leg.

1C Mountain Climber

Abs, glutes, quads, hamstrings
1. Kneel on all fours, your hands in line with, but slightly wider than, your shoulders.
2. Straighten your left leg and lift your right knee toward your chest. You should be on the balls of your feet, like a sprinter in the starting blocks. Now switch leg positions as many times as you can.

1D Flutter Kicks

Core, quads, glutes, hamstrings
1. Lie flat on your back and put your hands under your glutes.
2. Raise your legs 15cm off the ground and hold. Raise the left leg to 45 degrees while your right leg is stationary, and alternate your legs. “The kicking motion recruits different muscles in your core, challenging it to stay balanced and fry extra calories,” says Beall.

1E Bicycle Crunches

Core, abs
1. Lie with your feet in the air and knees bent to 90 degrees. Lace your fingers behind your head. Bring your knees into your chest.
2. Straighten your right leg and turn your upper body to the left, bringing the right elbow towards the left knee. Switch sides, pumping your legs back and forth. Giant set 1 done.

GIANT SET 2

2A Underhand Grip Pull-Ups

Lats, biceps, forearms, abs
1. You’ll need a pull-up bar for this one. Grab it with a shoulder-width underhand grip and hang with your elbows straight. “Adjust your grip if you’re struggling,” says Beall.
2. Bend your elbows to pull your chest to the bar. Peer over the bar for a second, then slowly lower yourself to the start position.

2B Press-Ups

Shoulders, chest, triceps, abs
1. For a solid chest, stick with the old reliable. Lie face down with your hands shoulder-width apart. Keep your arms straight, but not locked.
2. Bend your elbows to lower yourself to the floor. Then straighten your elbows to push back up to the start.

2C Chair Dips

Triceps, abs
1. Hold on to the seat behind you. Straighten your legs in front, then prop them up on another chair.
2. Lift yourself off the seat, then bend your elbows to lower your body. Straighten your arms to push yourself back to the start position. “You’ll work the biggest muscles in your arms, burning the maximum number of calories,” says Beall.

2D Crunch Twists

Core
1. Sit with your legs bent at the knee and raised a few centimetres off the ground.
2. Place your hands together, and reach over and touch the ground on the right side with your elbow. Rotate and touch the ground on the left. "Keep your core tight and your hands together to maximise your results," says Beall.

2E Wall Sit

Quads, hamstrings, glutes, core
1. Lean against a wall with your legs in front of you. “This keeps your back flat and places the stress on your quads,” says Beall.
2. Slide down until your knees are at about 90 degrees, and hold for 45 secs, keeping the abs contracted. Giant set 2 done.
